| Lemon Bars for breakfast, lunch and dinner! |
After one small post about these lemon bars, I had quite a few requests to blog about them and post the recipe. I will start by saying that I am not a dessert/sweets person, I never have been, but there are a few sweets that tickle my fancy, such as chocolate cake and lemon bars. This is the creme de la creme of lemon bars, it does not get tastier than this folks. My mom had gotten this recipe from Sue Skowronski, a friend whom she worked with at the Post Office. My mom said that whenever Sue would bring these to work, people would "come out of the woodwork for them." I think the key ingredient is fresh lemon juice, because apparently most recipes use bottled lemon juice instead. Whatever the key ingredient is, it just works. They are so creamy, yet not too sugary(which can ruin a dessert quicker than anything), and the crust is very light and buttery. They really do melt in your mouth. I'll stop there and post the recipe so you all can taste for yourself, you can thank me later. Shammy Says "When life hands you lemons, make lemon bars!" Indredients: Crust: 2 cups flour 1/2 cup powdered sugar 2 sticks butter 1 tsp. baking powder Filling: 2 cups sugar 1/4 cup flour 1/2 tsp. salt 1/3 cup freshly squeezed lemon juice 4 eggs Directions: Mix flour and powdered sugar. Cut in butter (like a pie crust). Pat into a 9x13 cake pan. Bake 20 minutes @ 350 degrees or until light brown. Mix sugar, flour, salt and baking powder together. Add lemon juice and eggs. Mix well. Pour over hot crust. Bake 25 minutes @ 350 degrees (until brown). Let cool and lightly sprinkle with powdered sugar. DEVOUR. |

Buff Shrimp is one of my favorite things to eat. When I used to work there, I would order them every night and they never got old. A lot of people complain about the food at Hooters, but I love it. Most menu items are deep fried and tossed in wing sauce, what's not to love? They taste even better with a side of cheese fries, or fried pickles. My wing sauce of choice is the 3-mile island. I also like the Hot and the Daytona, which is a sweet and spicy flavor. The Chicken Strips are also quite delicious if you are not a fish person. I am a fan of Hooters and always will be, and will continue to eat Buff Shrimp until I turn into one--as my Mom would say. Shammy Says "Hooters really does make me happy!!" |

When I started this blog, I did not intend on posting a bunch of recipes, because anyone could do that. However, some things are just too good not to share, like Chicken Roll-ups. My mom has been making these for as long as I can remember, and they always get rave reviews wherever she brings them. They are perfect for parties, showers, potlucks, or just to have around the house as a snack. I consider them healthy, but I am the queen of justification so I'll let you form your own opinion on that. They are made using cream cheese, flour tortillas, canned chicken and Picante sauce. They are super easy and super delicious, I would recommend everyone make a batch after reading this, just make a small one or you will eat every last one of them! Shammy Says Snack Attack Ingredients: 2 6-oz cans of Swanson chunk chicken 2 5-oz cream cheese (you can use reduced fat if you fancy that instead) Picante sauce Flour tortillas (About 12 large) Directions: Drain chicken. You can chop up the chicken a bit if you would like it to be shredded. Mix chicken, cream cheese, and a small amount of Picante sauce in a mixing bowl. Taste, then add more Picante to suit your palate. Spread on flour tortillas fairly thin. Roll up and slice into bite sized pieces. You can also serve with a dip, or a bowl of salsa as well. Enjoy! |

If someone were to ask me what I would eat for the rest of my life if I had to choose one thing, the answer would be "chips and dip". I have been making meals out of chips and dip for as long as I can remember. I use to beg my mom to let me eat "cheesy chips"(nacho cheese Doritos) and sour cream for dinner, and being the good mother that she was, she laughed at me and put vegetables on my plate. As soon as I flew the nest, I was free to eat chips and dip as much as I wanted, making it my dinner, lunch, and sometimes even my breakfast. Along with Doritos and sour cream, Tostitos and queso/guacamole, Chili's chips/salsa/ranch is one of my absolute favorite combinations of chips and dip. I was out to lunch with my sister one day, and she ordered a side of ranch with our chips and salsa. I thought she was crazy, I thought maybe she meant to ask for sour cream. But when it got to the table, it wasn't long before it was gone. I was hooked, and now I don't like to eat chips and salsa without the ranch, at least from Chili's. They have perfected their ranch, and their salsa as well. I was going to say, without sounding redundant, that I could make a meal out of it ;) Shammy Says "You can't just eat one basket" |
This Chili is Mmm Mmm GOOD!!

There are millions of chili recipes out there, but this one beats out any other by a mile. It was a cold night a few years back, and Fawna invited me over for chili and cornbread. I was hesitant, because up until then I really wasn't a huge fan of either. Her chili didn't look like any other chili I had seen before, so I was excited to try it. I can remember the first bite, it was so delicious and flavorful, with lots of different ingredients, other than just tomatoes and beans. I came home that night and raved about it to Pooh Bear, and he wanted to try it as well. I got the recipe from her, which was originally her Grandmother's. Fawna tweaked it to her liking, as did I. But the best, most unexpected chili ingredient is NEVER left out--dark unsweetened chocolate. When Fawna told me that she put chocolate in her chili, I was shocked, it seemed unnatural, almost like eating nachos without cheese, but it really is the key ingredient in making this chili rich-tasting. Emily now begs me to make it for her, almost on a weekly basis. I am going to unlock my safe and get the recipe out and share it with everyone, because I feel it is wrong to deprive people of truly delicious food. Thank you Fawna for this wonderful recipe that I will cook for years to come! Shammy Says "My chili...is your chili" Chili Ingredients: 1 lb Ground Turkey, Beef, or Chicken--whichever you prefer 1 Red Onion 1 15-oz can of Chili-Ready Tomatoes 1 can of Mexican Rotel 1 15-oz can of Stewed Tomatoes--or sometimes I use another can of Rotel 1 small can of Tomato Paste 2 15-oz cans of Corn 1 15-oz can of Black Beans(drained) Dark, Unsweetened Chocolate Garlic Powder Chili Powder Cumin Salt Pepper Directions: Chop the onion. Brown the meat with the onion and seasonings. Once the meat is browned, transfer into a large pot or crockpot. Add the chili-ready tomatoes, rotel, stewed tomatoes, tomato paste, corn, and beans. Bring to a boil then cover and simmer for one hour. You can really leave it simmering for as long as you like, sometimes I leave mine on all day. The longer it simmers, the tastier it is. Right before you serve it, grate some of the dark, unsweetened chocolate into it, not too much, maybe just a teaspoon or so. You are done, and it is ready to devour! I always like to add some grated sharp cheddar cheese, fritos, jalapenos, and sour cream to mine. Sometimes I make cornbread to go with it also. You can add or substitute anything you like, according to your own preferences. But I assure you, this will be the best chili you have ever eaten! Enjoy!! |

| The Perfect Sandwich |
I love sandwiches. Who doesn't? But my sandwiches must have lots of ingredients on them, the more the merrier. I also love sandwiches that are sweet as well as salty, such as "The Monte Cristo", so when I tried "The Black Forest" from Fox and Hound, I was more than pleased. My friend Fawna suggested that I try it a few weeks ago, and I was reluctant because when I go to Fox and Hound I normally get the sweet potato fries and buffalo wings. I agreed to step outside of my buffalo box and give something new a try, and I was very happy that I did. "The Black Forest" is a giant Bavarian pretzel roll topped with grilled turkey, applewood bacon, Monterey jack cheese, lettuce, tomatoes, and honey mustard dressing. The Bavarian pretzel makes the sandwich, giving it a soft, warm honey taste. The bacon was cooked perfectly, crispy and flavorful. Their honey mustard dressing is one of the best I have tried, and I try alot of honey mustard. All in all, it was MORE than I was expecting, but that is considered normal for Fox and Hound, as I am always pleased after eating there.

I am deeply upset by the latest menu item at Taco Bell, and coming from their most popular customer, this is not good news. It was around 1:00 in the morning the other night, and unlike most nights, we were on our way home from a night out with friends. Normally this moment is like Christmas morning, I get very excited with butterflies in my tummy, anxiously awaiting to pull up to the drive-thru at Taco Bell and order my favorite food. I rarely am disappointed when I venture out of my normal order to try something new, but this time I was not so lucky. I figured the "Beefy Crunch Burrito" would become my new favorite item, as the Volcano Tacos became that after they introduced them to their ever-changing menu. Cheese, rice, volcano fritos, sour cream; these are all staples of my diet, therefore I was about 97% sure of the yumminess that was about to happen in my mouth. Sadly, it did NOT taste good, it was surprisingly bland and the ingredients did not work together to create a party in my mouth, as I was expecting. I will never order this again, and hopefully it will just be a phase that goes away and never comes back. I personally think that they need to expand the Volcano Menu. Well, this will certainly not hinder me from eating at Taco Bell, but I will NOT order this again.
