A Summertime Favorite!

Healthy AND Delicious!

I was reading "The Skinnygirl Dish" by Bethenny Frankel the other day in hopes of finding some new healthy recipes to try. Everything that I have tried out of her book so far has been amazing--and healthy, so I was not surprised when I tried out the tuna salad recipe. I never make tuna salad because it always ends up tasting too fishy. I am certain that the reason this recipe is so yummy is because it requires fresh herbs, which I never buy. But I stepped outside my box today and bought some fresh herbs and it made ALL the difference. Now I have a delicious and healthy lunch for the rest of the week! What I also love is that you can eat tuna salad so many different ways, it is so versatile. I personally like mine between two slices of deli flats(100 calories total), with 2 slices of Havarti cheese.

Bethenny's Tuna Salad

Ingredients:

4 cans (about 6 ounces each) white tuna in water, drained
1/2 cup nondairy mayonnaise--if you have low fat regular mayo you can use that
2 teaspoons Dijon mustard
1/3 cup chopped fresh parsley
1/4 cup chopped fresh dill
Salt and pepper to taste

Directions:

1. In a bowl combine the tuna, mayonnaise, mustard, parsley, and dill. Season with salt and pepper.

Shammy's modifications:

1. I made half of this recipe and it was more than enough
2. I used "Spectrum" vegan mayonnaise, which you can find at Reasor's
3. I used "Sweet Hot Mister Mustard", which is also at Reasor's, because I am not a huge fan of Dijon
4. I added about 15-20 bread and butter pickles(finely chopped) because they are my favorite and in my opinion, were the perfect addition!

My mom got this recipe from her friend Peggy and I'm here to tell you that it's one of the BEST desserts I've ever had. It has some ingredients you wouldn't expect, but once you try the finished product the taste will definitely surprise you. My mom has made them a few times now and every time she does there are NEVER any leftovers, hence the title. Clearly these are not the healthiest thing to eat, but they are great to make for a holiday, party or potluck, everyone will beg you for the recipe afterwards! Here you go!

Apple Dessert


Ingredients:


2 Granny Smith apples
2 sticks butter
1 teaspoon Cinnamon
2 cans Crescent rolls
1 1/2 cups sugar
1 can Mountain Dew

Directions:


Preheat oven to 350 degrees. Peel and slice apples into 1/8's. Heat butter, sugar and cinnamon until well blended. Wrap apple slices in crescent rolls. Place in 9 x 13 cake pan that has been sprayed with Pam. Pour  butter mixture over top, trying to completely cover. Pour Mountain Dew around sides of pan. Bake for 45 minutes. Serve hot with Vanilla Ice Cream.

Best Chicken Recipe YET!

Almond-Crusted Chicken Fingers

I was looking for some different, healthy recipes to make for dinner and I came across this recipe on eatingwell.com. The recipe called for chicken tenders, but to be honest those really gross me out, so I just cut strips from boneless skinless breasts. Also, I did not have almonds but I had cashews so I used those instead. Those are the only two things that I did different. The recipe was a tad difficult, but when I took my first bite, I decided that it was well worth it. My husband has been on a strict diet for a few weeks now, so this was even more delicious to him. He even asked me to make them for dinner again tonight! My personal favorite thing about this recipe is that each serving has 174 calories, 4 grams of fat(most of the fat being mono because of the nuts), 27 grams of protein and FOUR CARBS!! So if you are getting your body ready for summer like I am, this is a PERFECT meal for dinner, just add a veggie and you are set! Enough talk, time for the recipe! Enjoy!

Almond-Crusted Chicken Fingers


Ingredients:

Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup whole-wheat flour
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
4 large egg whites
1 pound chicken tenders--I used boneless skinless breasts


Directions:

1. Preheat oven to 475 degrees. Line a baking sheet with foil. Set a wire rack on the baking sheet and coat it with cooking spray.

2. Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor--NOTE: I do NOT own a food processor so I just put the nuts in a ziploc bag and used a tenderizer to crush them, then added the rest of the ingredients and it worked just fine. Transfer the mixture to a shallow dish.

3. Whisk egg whites in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. (Discard any remaining egg white and almond mixture.) Place the tenders on the prepared rack and coat with cooking spray; turn and spray on the other side.

4. Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20-25 minutes. (I cooked them for 20 minutes and they were perfect, maybe even a little less cook time)

Anyone remember Oatmeal Swirlers?!

Two of our favorites: Cinnamon Roll and Strawberries and Cream!

Oatmeal Swirlers. Two words that make my tummy growl. If you had Oatmeal Swirlers as a child, then you know of the deliciousness I am speaking of. It was packets of instant oatmeal with a ketchup-like packet of strawberry goo that was out-of-this-world good, seriously I used to sneak into the pantry and just eat the packet of goo, ask my mom. There is actually a petition going around for them to be brought back that I have signed. This oatmeal is not Oatmeal Swirlers, but it bears a striking resemblance to them. Oat Revolution is healthy, delicious and well priced. I love having quick options for breakfast, especially now that I have a kid. However, "quick" usually translates to "unhealthy". This oatmeal is anything but unhealthy. The ingredients are whole grain rolled oats with flaxseed, while also containing multiple vitamins and minerals. It is also super easy to make, you tear off the top half of the pouch and dump the oats in a bowl, then fill the bottom half of the pouch to the fill line with water, pour it in the bowl, and microwave for 90 seconds. Done. How easy is that? I make this for Kyler most mornings and add Almond Milk to give him calcium and extra protein. Josh and I also eat it ourselves. The Cinnamon Roll is my favorite, due to the fact that it tastes exactly like a giant cinnamon roll. Reasors carries this and I think Whole Foods does as well. They are $1.35 for a box of 5 pouches, extremely reasonable.

Junkyard Dawgs

"The Colossal Dawg"

I was referred to Junkyard Dawgs by Wes Hodges when I asked for recommendations for my blog. He knows my style well enough to know that this place would be right up my alley, and it was. I ordered "The Colossal Dawg" which is a quarter pound all beef "hotdawg" with yellow mustard, nacho cheese and sauerkraut. To be quite honest when I saw the words "nacho cheese" I knew this was the "Dawg" for me. I got a bag of potato chips and a slice of vanilla cake with chocolate icing to ensure I met all 4 food groups. The Dawg was very good, you can definitely tell a difference when you eat an all beef hot dog, they have a crisp bite to them. The nacho cheese--get ready--made it PERFECT! Betcha didn't see that one coming...

Favorite Weight Watchers Recipe!

Crazy Good
This is one of mine and Josh's favorite meals that my mom makes. She invited us over for dinner a few years ago and told us that she had a Weight Watchers recipe she was cooking for us. Our mouths were watering---NOT. Who wants to eat a Weight Watchers meal? Nobody does. But this meal was the exception to the rule regarding diet dinners. Josh is probably one of the hardest people to please when it comes to food, he didn't even eat potatoes when I met him. He gobbled this up as fast as my mom could put it on his plate, and I did the same. I am going to go ahead and say that this is one of the best recipes I have ever tried, regardless of the fact that it is a super healthy one, which makes it taste even better :)

Weight Watchers Orange Crumbed Baked Chicken

Ingredients:

2 tablespoons orange juice
2 tablespoons Dijon mustard
1/4 teaspoon salt
3/4 cup whole wheat crackers, crumbled
1 tablespoon orange zest, grated
1 shallot, finely chopped
1/4 teaspoon ground pepper, freshly ground
12 ounces boneless skinless chicken thighs

Directions:

1. Preheat oven to 350 degrees. Spray a nonstick baking sheet with nonstick cooking spray.

2. In a small bowl, combine the orange juice, mustard and salt. On a sheet of wax paper combine the cracker crumbs, orange zest, shallot, and pepper. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on the baking sheet.

3. Bake 15 minutes, turn over and bake until cooked through. 15 to 20 minutes longer.

Chicken and Fries

Heaven in a Basket
If you haven't had Rex's Chicken yet, you are really missing out. Fried Chicken is one of those things that can either be very good or very bad depending on the quality of the meat, the amount/type of breading, tenderness, moistness, etc. Rex's Chicken has been one of Josh's favorite places to eat since high school and it still is. It took me a while to try it, but when I finally did I was blown away at how good it was. They have the most moist, delicious chicken I have ever eaten, and their fries are just as good. I am sure you have heard about their Fry Bread, which is a soft, warm biscuit. First of all, they should not be called "Fry Bread", they should be called "Perfection". I really don't know how to describe them, because it doesn't matter what I say, it won't do them justice until you try them for yourself. They are unbelievably soft, warm and sweet, after you put the honey on them get ready for a taste explosion. Rex's is a little more pricey than the local fast food chicken, but with good reason. The meals start around $7 but once you taste the food, you would probably be willing to pay more.
