Favorite Weight Watchers Recipe!

This is one of mine and Josh's favorite meals that my mom makes. She invited us over for dinner a few years ago and told us that she had a Weight Watchers recipe she was cooking for us. Our mouths were watering---NOT. Who wants to eat a Weight Watchers meal? Nobody does. But this meal was the exception to the rule regarding diet dinners. Josh is probably one of the hardest people to please when it comes to food, he didn't even eat potatoes when I met him. He gobbled this up as fast as my mom could put it on his plate, and I did the same. I am going to go ahead and say that this is one of the best recipes I have ever tried, regardless of the fact that it is a super healthy one, which makes it taste even better :)

Weight Watchers Orange Crumbed Baked Chicken

Ingredients:

2 tablespoons orange juice
2 tablespoons Dijon mustard
1/4 teaspoon salt
3/4 cup whole wheat crackers, crumbled
1 tablespoon orange zest, grated
1 shallot, finely chopped
1/4 teaspoon ground pepper, freshly ground
12 ounces boneless skinless chicken thighs

Directions:

1. Preheat oven to 350 degrees. Spray a nonstick baking sheet with nonstick cooking spray.

2. In a small bowl, combine the orange juice, mustard and salt. On a sheet of wax paper combine the cracker crumbs, orange zest, shallot, and pepper. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on the baking sheet.

3. Bake 15 minutes, turn over and bake until cooked through. 15 to 20 minutes longer.
